HOW I CAUGHT CRAFT BEER FEVER:
First job out of graduate school, I was in Yeast Research and Development for Coors. It started the fever that blossomed into a broad range of professional experiences to include Sake, Wine, Distillates, Beer, Tea, Soda, and other products mostly professionally accessed through my background in science. If you were a vampire, you may have tried one of my other beverages from the biopharmaceutical industry, fake blood (ew). It’s not all glamour, ok?
ON SMELLING ALL THE SMELLS:
My favorite part of making beverages is the various aromas one gets from each distinctive process. For example, the rich bready smell of spent grain and boiling wort; the pungent esters associated with sake/wine/beer fermentation (this is intoxicating to me all by itself); the almost rosewater like aromas from sake distillates; sweet, fruity and dank notes provided by hops during dry hopping. Manipulating all those components using simple methods derived from the scientific process…that is where my passion lives.
SHE’S THE MOTHER OF SUBSTRATES – THE PACIFIC NORTHWEST:
Our region provides a great cornucopia of substrates that make for great meals whether solid or liquid. With 18 hours of daylight in the summer, irrigation to provide just the right amount of water, and a rich farming background, growers in this region have been able to provide top notch grain, fruit, and meats to the world. Central and Eastern Washington alone provide everything needed to produce world class beverages in a relatively small area.
FAVORITE THING TO DO IN YAKIMA WHEN YOU’RE NOT MAKING BEER?
I love exploring the Pacific Northwest. From hiking the amazing trails near Rainier to hanging out on the Columbia watching fishermen pull in amazing catches, the state of Washington is one of the few states with all four ecozones. If you love great food and sunny environs without all the hustle bustle of the city, you will love Eastern Washington!
